Hello, this is Chef John from
foodwishes.com with taco beef lettuce
cups. That's right, we're giving crispy
taco shells the day off. And instead,
we'll be filling nice, fresh, crisp
lettuce cups with what I think is the
best, easiest, most crowd-pleasing
ground beef taco filling I know. And to
get started, what we'll do is add some
sliced green onions to a little bit of
vegetable oil set over high heat. And
then we'll also be transferring in one
pound of lean ground beef, which as
usual, we'll break up with a spatula.
And by the way, you could use any onion
for this. But what I love about the
green onion is that we can use the white
part and light green parts to sauté
with. And then we can save and slice up
the dark green parts and use that to
garnish.
But anyway, like I said, we'll break
that meat up with our spatula. Not super
fine at this point, but fairly small
into something that looks like this. And
once we reach this stage, we'll reduce
our heat to medium high. And then we'll
flavor and season this up with some
salt, followed by some freshly ground
black pepper, some garlic powder. We
will also want to do some chili powder,
of course, followed by some ground
cumin, as well as three or four shakes
of cayenne just to warm things up a bit.
And then I think we also want a nice big
pinch of oregano. Ideally, Mexican
oregano if you can find it, but if not,
regular will work. And then we'll finish
up with some tomato paste as well as my
one and only secret ingredient, some
tomato ketchup, which is going to add a
touch of sweetness, plus give us that
little bit of hint of warming spice in
the background. And what we'll do is
cook this stirring for about a minute,
at which point we'll kind of spread
everything out into a nice even layer.
And then we'll let it cook for another
minute or two without stirring it. Since
what we want to have happen is this
mixture to dry out a little bit to the
point where things start to caramelize
onto the bottom. So, let me go ahead and
grab a spatula and give you a good look
at what I mean. Are you see how those
crumbles of meat are taking on a little
bit of browning? That right there is
exactly what we want. And not only is
that going to make our taco beef look
better, it's going to make it taste
better. So, once that's happened, we'll
give it another mix and then spread it
out again. And we will give it a second
crustification, which is plenty for me.
But if you want to go for a third, feel
free. Just be careful not to go too far
since golden brown is good. But we want
to try to avoid any golden black. And
that's it. Once we've done the old crust
and stir twice, we will finish up by
tossing in a nice big splash of cold
fresh water. And we'll go ahead and stir
that in. And basically what we're doing
here is rehydrating the meat and adding
some moisture back in that just got
evaporated out when we were doing the
crusting step. And at this point it's
decision time. Right. This is now pretty
much ready to use whenever we want. And
we could if we want leave it kind of
saucy or we could actually let it
crustify again to get a drier, stickier
version. And personally, as I tend to
do, I'm going to go somewhere in between
both. But anyway, right about here, I
was very happy with the appearance and
it smelled incredible. So, I went ahead
and turned off the heat and grabbed a
spoon. So, we can give this one more
stir and of course taste for seasoning
and adjust if need be. But mine was
tasting absolutely perfect. And once it
is, we can arrange our lettuce cups on a
tray. And for this, I highly recommend
you use butter lettuce or bib lettuce,
which features these perfectly shaped
cup-like leaves. And yeah, some are
going to be nice and big like this one,
and others are going to be half the
size, but that's fine. The people that
are going to be enjoying this are also
going to be different sized. So, we got
that going for us, which is nice. And
that's it. We'll take our still warm
taco beef and we will fill our cups up
with as much as we think will fit. Oh,
and I should mention you don't have to
portion for your guests. You could set
this up as a taco beef lettuce cup bar
and have all your lettuce in one bowl
and your beef in another and your
fixings around the side. So, if you'd
rather do that, go ahead. I mean, you
are after all the eon flux of your taco
beef lettuce cups. But no matter which
way you go, people are going to be very
animated when they start eating these.
And that's it. We'll finish up very
simply by garnishing with some shredded
Monterey Jack or the taco cheese of your
choice. And since I really want the taco
beef to be the star, I'm not going to
overdo it with the toppings. Okay, I
think just a little pinch on each is
perfect. And then I'm also going to do a
little scattering of finely diced red
onion. Followed by some diced tomato. Or
if you wanted, you could use like a mild
tomato salsa, but I think the beef is so
perfectly seasoned. I do prefer the
plain diced
tomato. And then we will finish up with
a little bit of freshly sliced green
onion. And that's it. Our taco beef
lettuce cups are ready to enjoy. And
that, my friends, I think is the perfect
delivery system for this very flavorful,
very savory beef. And that's coming from
someone who absolutely loves and grew up
eating crispy beef tacos. And I'm always
up for enjoying some of those. But I
have to say, I really do like these just
as much. And as I mentioned earlier, if
you learn this version, you've actually
learned lots of different versions.
Since instead of beef, you could use
pork or chicken or turkey or lamb. And
instead of taco seasoning, you could do
a Middle Eastern take or an Asian take.
So, I think this is a really fun recipe
to experiment with. And maybe you and
the kids can get together and come up
with your own signature version. And
while I think the optimal temperature to
enjoy this meat would be warm, these are
also really, really good at room temp,
which makes it perfect to bring to that
party when you weren't sure what to
bring. But you know, you have to bring
something. And with these, that thing
might be the best thing. But no matter
what temp you serve these at or how you
tweak things to your own taste, these
taco beef lettuce cups are a fun,
frugal, easy thing to make. And I really
