00:01

hello this is Chef John from

00:03

foodwishes.com

00:05

with bang bang chicken

00:07

nuggets that's right I'm going to show

00:10

you my take on bang bang chicken which

00:12

actually might be closer to boom boom

00:14

chicken right this is kind of both so

00:17

what I'm trying to say is I'd really

00:18

love it if you called this bang bang

00:20

boom boom chicken oh yeah people are

00:22

going to enjoy saying that but not as

00:25

much as they're going to enjoy eating

00:26

this and to get started we'll go ahead

00:28

and cut up some chicken for nuggets and

00:31

for this I use both boneless skinless

00:33

chicken breast and boneless skinless

00:35

chicken thighs but this will work with

00:38

all one or the other and all we need to

00:40

do to prep this is cut it into like one

00:42

one and 1/2 inch strips and then we'll

00:44

simply slice across that every inch or

00:46

so to create some hopefully fairly

00:48

uniform pieces and yes as you can see

00:51

from the dramatic Shadows I did this

00:53

early in the morning which is not common

00:55

for me right I'm normally not up and

00:57

working until the cracken noon but

01:00

anyway once we have our chicken cut up

01:02

we will transfer that into a food

01:03

processor along with the rest of our

01:05

nugget

01:06

ingredients which will include some

01:08

breadcrumb some salt of course we'll

01:12

also do some freshly ground black pepper

01:15

a little bit of pea which could be

01:17

regular or

01:18

smoked and then I think we definitely

01:20

want a little bit of cayenne because

01:22

bang

01:23

bang and then we'll finish up with some

01:25

garlic powder as well as a little

01:27

drizzle of oil just for a little extra

01:30

richness and to help keep our nuggets

01:32

moist and tender and that's it we'll pop

01:34

on the lid and puls this on and off

01:37

until our chicken ground as finely as we

01:39

want which for me is not going to be

01:41

super

01:42

fine okay if you want these closer to a

01:44

fast food nugget which is basically a

01:46

piece of fried chicken loaf you'll

01:48

probably want to grind this a little

01:50

smoother but personally this is what I'm

01:52

after okay a pretty small grind but it's

01:55

definitely not puree and that's it once

01:58

our nugget base has been blit

02:00

we can go ahead and scoop equal siiz

02:02

portions onto a sheep pan and I'm

02:04

thinking a couple tablespoons is just

02:05

about the perfect size although

02:08

obviously that's something you can

02:09

adjust depending whether you want Little

02:11

Adorable nuggets or even bigger more

02:13

Bodacious nuggets and other than the

02:16

frying time the procedure will be

02:18

exactly the same so you go ahead and

02:20

make the call I mean you are after all

02:23

the Pistol Pete of portioning your

02:25

ground meat and speaking of balls

02:28

instead of forming nuggets which is is

02:30

what we're going to do next you could

02:31

actually serve these as fried meatballs

02:34

which I think would also be very well

02:35

received but anyway once portion we will

02:38

wrap those up and pop them in the fridge

02:41

so they're nicely chilled and easier to

02:43

work with when we coat them with our

02:44

starch which is going to be nothing more

02:47

than some corn starch mixed together

02:49

with some sulfurizing flour or just

02:51

regular flour with a little bit of

02:53

baking powder in there and if you go

02:55

that route we'll explain that in the

02:57

ritten recipe in any event we'll mix

02:59

that very thoroughly in a bag and we

03:02

will pull out our soon to be nuggets and

03:04

what we'll do is quickly form these in

03:06

the balls by first wetting our fingers a

03:08

little bit so the meat doesn't stick oh

03:11

yeah as you well know damp hands make

03:13

smooth balls and what we'll do is toss

03:15

five or six in at a time and then we'll

03:18

shake them and toss them around until

03:19

they're well coated before shaking off

03:22

the excess and returning them back to

03:24

the

03:24

pan and now the recipe it's going to say

03:26

you're going to get 24 nuggets out of

03:28

this batch but as you can see I got

03:32

23 so if you want 24 make them a little

03:35

smaller and then what we're going to do

03:37

once all those have been dredged is

03:38

shape those into nuggets which of course

03:41

depending on where you eat them will

03:43

vary in size and shape but for me I kind

03:45

of go with a flat oval but hey if you

03:48

prefer a little bit of a pointier nugget

03:50

that is not going to bother me and then

03:52

what I like to do once all these are

03:54

coated is pop them back in the fridge

03:56

which I do uncovered but you can cover

03:58

them if you want

04:00

and I like to leave them in there for a

04:01

couple hours to really give that starch

04:03

on the surface time to adhere but if

04:06

you're starving you can pretty much fry

04:07

these up anytime you want and while

04:09

those are chilling we should go ahead

04:11

and make our bang bang sauce which

04:13

starts with some mayonnaise to which we

04:15

will add some honey and once we do some

04:18

sweet we will add some heat in the form

04:20

of some shirata hot sauce and I like to

04:23

add a lot but of course that's going to

04:25

be to taste just like the honey is and

04:28

then for my version we'll also add some

04:29

some rice vinegar as well as some soy

04:32

sauce plus a little bit of sesame oil

04:36

and then last but not least a little bit

04:37

of ground San peppercorn which is

04:40

totally optional but highly

04:42

recommended and that's it will give this

04:44

a thorough whisking until it's all

04:46

combined at which point will give it a

04:49

taste and adjust with more sweet or in

04:52

my case more heat and that's it once

04:55

that's tasting exactly how we want we

04:57

will simply refrigerate that until

04:59

needed

05:00

and then as far as how to cook the

05:01

Nuggets I'm actually going to shallow

05:03

fry these in vegetable oil over about

05:05

medium high heat although I should

05:08

mention for the full chicken nugget

05:09

effect they're supposed to be deep fried

05:12

but this really does work out almost

05:13

exactly the same and please keep in mind

05:16

these are going to get tossed with our

05:17

bang bang sauce so they're not going to

05:19

stay super crispy anyway and what we'll

05:21

do is cook that first side for a couple

05:23

minutes or until we've achieved a nice

05:25

golden brown at which point we'll flip

05:27

them over and give the other side a

05:29

couple minutes

05:30

and if you are doing these in batches or

05:32

doing a whole bunch you can just keep

05:34

the ones you fried in a warm oven until

05:36

they're all finished which is what I did

05:38

while I fried the other half of the

05:40

batch and that's it once fried we can

05:42

transfer those into a mixing bowl and

05:44

we'll toss in some freshly sliced green

05:46

onions and we'll pour over a couple nice

05:49

ladles of our bang bang sauce or just

05:52

enough to coat and then we can serve the

05:53

rest

05:54

alongside and that's it we'll toss and

05:56

stir those until they're coated and by

05:58

the way the recipe is going to make make

05:59

lots of extra sauce which is nice since

06:02

that stuff's gray down like a thousand

06:03

other things and then once our nuggets

06:06

have been saued we'll go ahead and play

06:08

up and once I had those piled up I gave

06:10

them one more drizzle of shirata before

06:13

I finished up with some more sliced

06:14

green onions and that's it what I'm

06:16

calling bang bang chicken nuggets are

06:18

ready to enjoy so I grabbed a fork and

06:21

stabbed a nugget and went in for the

06:23

official bite and that my friends if

06:26

you're a fan of sweet and spicy sauces

06:28

like I am is going to be an incredibly

06:30

delicious bite of food and I enjoy that

06:33

whole sweet heat thing on pretty much

06:34

anything but when we're talking about a

06:36

homemade chicken nugget that's been

06:38

fried up to have that nice crispy

06:40

exterior which holds on to our sauce so

06:42

perfectly we produce something extra

06:44

extra special and because I didn't puree

06:47

the meat these do have a texture

06:49

reminiscent of a meatball or maybe like

06:51

a dumpling filling which totally works

06:53

for me oh and fun fact people assume the

06:57

bang bang refers to the spiciness of the

06:59

sock

07:00

but it actually doesn't right the
